The Guy Corner NYC is invited to the French Cheese Board from time to time and it is always a great night filled with learning about French cheeses, most likely paired with wonderful wines or cocktails. One of my nights there thanks to Camille Labarthe who set up each wine and cheese combination, I got to enjoy a great wine and cheese pairing. She walked us through a little background on the decision to pair these cheeses with the specific wines mentioned below. The employees of the French Cheese Board also spent time setting up and putting together these great pairings. Below are the 3 great pairings we had. We recommend you try these for your next gathering with friends. Though I enjoyed all 3 pairings my favorite is definitely the Riesling Grand Cru Kirchberg 2014 and Le Chevrot.
Riesling Grand Cru Kirchberg 2014 and Le Chevrot
The Grand Cru Kirchberg de Barr is one of the most renowned Grand Crus of Alsace. Light yellow in color, this wine has a fresh nose with floral notes and touches of peppermint. On the palate there are notes of grapefruit zest that underline the freshness of this wine.
Le Chevrot is made from goat’s milk and has an off-white, slightly wrinkled rind. When very young, the cheese has a gentle, aromatic, and fine, moist texture. As it ages, the interior softens and the flavor becomes nuttier and fuller-bodied. At its peak, the cheese is denser and creamier, and there is a fruity tinge to the taste.
Crémant d’Alsace Blanc De Noirs & Chaource
The AOC Crement d’Alsace is produced according to méthod traditionnelle. This sparkler shows nice white golden bubbles. Fresh grape and apple on the nose and an elegant freshness.
Chaource is soft and creamy cow’s milk cheese with an earthy mushroom flavor and melt-in-your-mouth texture. It is cylindrical in shape, similar to a brie, and slightly salty taste.
Gerwurzttraminer Clos Gaensbronnel 2012 and Epoisses
The fine finesse of this Gewurtztraminer is due to the influence of the limestone. It’s golden yellow and aromatic.
With its strong aroma and deep orange exterior, you might expect Epoisses to possess a bold flavor. However, you will find a smooth and silky Cheese equipped with a unique, slightly salty taste.
