I know I am one who does a lot of food postings and especially ones that can be done on the grill. Today I am going to provide you with a side bean salad to go with one of those grilling favorites. This fiesta bean salad is one that my wife makes and we both really enjoy it during the summer.
With summer comes BBQs and tons of sides. I great healthy side with plenty of protein that will fill you up is this salad over here. I have to be honest. This is something I could probably eat as a lunch meal all by itself as apposed to a side dish. There is only one problem with that, you guessed it. Too many beans and you know what they say about beans. lol You can’t go wrong with southwestern flavors though.
What’s more it’s antioxidant rich, full of heart healthy fats, clean, and high in fiber which keeps you full and satisfied. This serves four as a main dish, if you prefer to have this as a side dish, then it would easily serve 8.
2 cloves garlic, minced
3 tbsp fresh lime juice
1 tbsp extra virgin olive
1/2 teaspoon salt
15 oz can black beans, rinsed and drained
1 cup canned chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup minced red onion, finely diced
1/4 cup cilantro, chopped
1 medium avocado, diced
1. In a large bowl, combine the garlic, lime juice, oil and salt.
2. Add the black beans, chickpeas, tomato, onion and cilantro; mix well. When ready to eat, gently mix in avocado and serve right away.
