Me and my family love macaroni and cheese and yes we usually use the store bought box mix. This time I say give up the box mix, making Classic Baked Macaroni and Cheese from scratch is easier than you think and lets face it baking mac and cheese makes it even more yummy. Another little tip, sprinkle bread crumbs over the whole thing before baking. BOOM! Now you got yourself something special. Enjoy!
Ingredients:
2 Tbsp Argo corn starch
1 tsp salt
½ tsp dry mustard (optional)
¼ tsp pepper
2 ½ cups milk
2 Tbsp margarine or butter
2 cups (8 oz) shredded American or Cheddar cheese, divided
8 oz elbows (about 1 ¾ cups), cooked 7 minutes and drained
Directions:
1. In medium saucepan combine first 4 ingredients; stir in milk.
2. Add margarine; stirring constantly, bring to a boil over medium-high heat and boil 1 minute. Remove from heat.
3. Stir in 1 ¾ cups cheese until melted. Add elbows.
4. Pour into greased 2-quart casserole. Sprinkle with reserved cheese. Bake uncovered in 375 degrees F oven 25 minutes or until lightly browned.
BAKED HAM ‘N’ CHEESE MACARONI: In step 3, stir in 1 cup diced ham with elbows.
I always make homemade mac and cheese. I never thought to add corn starch to thicken my sauce, will try it.
